Cinnamon Pecan Monkey Bread

20 frozen uncooked yeast dinner rolls (like Rhodes Thaw, Rise and Bake rolls)

1/2 cup granulated sugar

2 teaspoon ground cinnamon

1/4 teaspoon ground ginger

1/2 cup chopped pecans, plus more for garnish

1 cup light brown sugar

3/4 cup unsalted butter, melted

1/3 cup heavy cream

Sugared Cranberries (recipe follows)

Prepare a tube pan by brushing melted better to coat the pan.

While the rolls are still frozen, cut them into quarters; set aside.

In a small bowl, whisk together the granulated sugar, cinnamon and ginger. Dip the quartered dough balls into the cinnamon sugar mixture.

Place the cinnamon sugar balls into prepared tube pan and sprinkle pecans throughout the dough balls and repeat until all the dough balls are coated.

In a small saucepan over medium heat, heat the light brown sugar, butter and heavy cream. Stir the sauce continuously until the sugar is dissolved and it begins to simmer.

Pour the sauce over the dough balls in the tube pan. Cover the tube pan with plastic wrap and allow the monkey bread to rise for 45 minutes.

Bake at 350 F for 35-40 minutes. Allow the monkey bread to sit for 10 minutes before inverting the monkey bread onto a platter. Garnish the monkey bread with Sugared Cranberries and chopped pecans.

Sugared Cranberries: In a small saucepan, combine 1/4 cup water and 1/4 cup granulated sugar and bring to a boil. Once the sugar is dissolved, turn off heat and remove from the stove. Pour 1 cup fresh cranberries into the simple syrup and gently stir. Allow the cranberries to sit in the simple syrup for 10 minutes. Remove the cranberries from the simple syrup and lay them on parchment paper, keeping them all separated. Once the cranberries have cooled off, dredge them in more granulated sugar.

Makes 12 servings.

PER SERVING: 503 calories, 4 g protein, 80 g carbohydrates, 1 g fiber, 49 g sugar, 19 g fat (9 g sat fat), 38 mg cholesterol, 223 mg sodium
